<p>On Saturday Sept. 10th, 2011 we kicked off Non-GMO month early by holding our first <a href="http://www.righttoknowohio.com">Right to Know &#8211; Ohio</a> event with nationally renowned keynote speakers Jeffrey M. Smith &#038; Robyn OʼBrien on the topic of GMOs (genetically modified organisms).</p>
<p>The event was a success with approximately 300 people in attendance and many of those representing major groups like the Weston A Price Foundation, the OCA (Organic Consumerʼs Association), Millions Against Monsanto, Eden Foods, Organic Valley, the Non-GMO Project, Small Farm Institute and many, many more.</p>
<p>When we set out on this adventure, we knew it would be an uphill battle. This is a subject that is not often talked about, and most certainly not understood by a huge majority of people in Ohio. There are lots of people that just plain donʼt even want to know. They are already facing enough of a battle on a daily basis for survival. Then there are the farmers whose families have been feeding us for generations. How do we bring this message to the people without hurting them? There were so many dynamics involved in setting up this event that I was completely unprepared to face. There was even a point where I said I canʼt do this. The thought of hurting one person was terrifying to me. But then I realized how many people have already unknowingly been affected by these foods and I knew that the message must be shared. So I moved forward “afraid.”<span id="more-1524"></span></p>
<p>Do it “afraid” was a phrase that I had just heard during my training to be a certified trainer and coach through the John C. Maxwell team. Those were words that I heard over and over in my head every single day. It reminded me that no one is born knowing how to do something and at times we must step out in faith without having all of the answers. So we did just that, and no matter what obstacles that we faced, we had a greater belief in the message that we were sharing. Everyday we worked hard and everyday we heard the words “no I donʼt want to get involved” many times.</p>
<p>But now that we have our first successful event under our belt, next years event will be even more successful. I have already received emails from 3 separate groups that are putting on events in Ohio because of the information that they learned at our event. To me, that is HUGE success and we know itʼs just the beginning.</p>
<p>For those of you that may not yet have heard “October” is Non-GMO month. The Non- GMO Project has over 800 natural health food retailers across the U.S. enrolled and signed up to educate their customers on GMOs. Many of these retailers will be offering specials on Non-GMO Project Verified products throughout the month. We encourage you to get involved. Visit <a href="http://www.nongmoproject.org">www.nongmoproject.org</a> for a complete listing of Non-GMO Project Verified products, participating retailers and sign their Non-GMO Pledge. You can also stay up to date with the latest news by joining them on the <a href="https://www.facebook.com/nongmoproject">Non GMO Project Facebook Page</a>.</p>
<p>In our household we have made a concerted effort over the last year to avoid foods containing GMOs. As you can imagine we are well educated on this subject and have discovered how hard it truly is to avoid GMOs. The biggest problem we face is that many companies make the claim, but have no 3rd party verification. As you become educated on this topic, you will realize that the only way to really ensure you are avoiding GMOs is through 3rd party verification organizations such as the Non-GMO Project, growing your own food, or finding certified organic farmers that you know and trust their farming practices. Remember that the government currently does no testing on Certified Organic farms for GMOs.</p>
<p>With October right around the corner, we are stepping up our efforts and making a commitment for 31 days to do our best to 100% avoid GMOs. Itʼs not going to be easy but there is one thing I know for sure. Doing so this year will be much easier then it was last year. Hopefully by next October, laws will be passed for mandatory labeling of foods containing GMOs. Once that happens, people will truly have the right to choose. Till then, it takes a lot of hard investigative work to know which foods are safe. But itʼs worth the effort.</p>
<p>Throughout the month of October, we will be posting a listing of events, articles and blogs on our FB page all relating to Non-GMO month complete with photos and stories from our own event. </p>

<p>I was so happy to watch on Groundhog Day that after Punxsutawney Phil surveyed his surroundings, there was no shadow to be found, so an early spring it will be!!  That’s a fact, and I’m holding him to it! It’s been a beautiful, snowy and cold winter here in Ohio, but I am more than ready for the warm, sunny days of spring.  But Spring isn’t the only thing coming in March.  For all you sports fans, no one needs to tell you…..March Madness!!</p>
<p>What goes better with watching a great college basketball game than pizza?  And this month you are getting two pizza recipes instead of just one.  One is based on my favorite pizza made by an Old Italian grandma in my hometown using my Simply Sauce pizza sauce and the other was submitted by the owner of Berlin Natural Bakery, Joy Zipper.  Joy&#8217;s Pizza is called &#8220;California Sunshine Pizza&#8221; and it will definitely brighten any party or meal.</p>

This next step is based on preference…I usually place all my toppings on top of the sauce as I feel they bake a little better that way.  But, if you prefer your toppings a little more crunchy, you may want to put them on top of the cheese.  However you prefer, the next step simply involves putting on your toppings, cheese and then pepperoni if desired.  Place pizza tray on rack in middle of oven and bake for approximately 18-20 minutes or until cheese is melted and golden brown.  Remove from oven and allow to cool for a few minutes.  Slice and eat!</p>

<p><strong>Why we joined the Non-GMO Project and what it means to you.</strong></p>
<p>As most of you know by now, Berlin Natural Bakery products are Non-GMO Project “Verified”. We have heard from many of you over the past month asking what exactly “genetically modified” means and to please provide additional information. In this letter, it is my goal to give you a brief overview of what GMOs are and share with you why we are so passionately committed to producing products free from these types of ingredients.</p>
<p>As always we encourage you not just to take our word for it on any issue. The best way to determine what you believe is by doing your own research. The information below will explain why we believe this is the most important issue that our current food supply is facing, and hopefully illustrate to you why these specific types of ingredients could be even more dangerous for those suffering with food allergies.</p>
<p>Today it is estimated that over 80% of processed food found on your grocery store shelves contain genetically modified ingredients. When I first heard this statistic, I did not believe it and at the same time two specific questions came to mind.</p>
<p><strong>Question #1</strong> How is it possible for these ingredients to be in over 80% of our products without us having any knowledge of it or the potential dangers of these ingredients?</p>
<p><strong>Question #2</strong> Why isn’t this specific information listed on our food labels letting us as consumers know that GMO ingredients are in the products?</p>
<p>I know all of this may sound crazy but unfortunately the 80% GMO statistic is an undeniable fact. As you continue reading you’ll soon realize how this came to be.</p>

<p><strong>What is a GMO?</strong></p>
<p>A GMO (genetically modified organism) is the result of a laboratory process of taking genes from one species and <em>inserting</em> them into another in an attempt to obtain a desired trait or characteristic. This is a process that could not happen on its own in nature or through traditional crossbreeding methods farmers have been using successfully and safely for hundreds of years.</p>
<p>For example, a gene from a Brazil nut was spliced into soybeans in an effort to increase the amino acids in the soybean which would create a more nutritious food for animals. The studies conducted by the biotech company on the soybean were done only on animals and they found the soybean to be safe. But thanks to the University of Nebraska’s findings, the production of this soybean was immediately halted. The University discovered that the soybean could induce potentially fatal allergic reactions in people that are sensitive to Brazil nuts. What Dr. Taylor at the University of Nebraska discovered prevented a potential public health disaster. This study also proves that allergens (proteins) are transferred in the process.</p>
<p>The U.S. Government’s position on the safety of genetically engineered crops relies on the findings from the biotech companies. If the biotech companies deem them as safe the U.S. government deems them as safe. This is the same philosophy that the U.S. government uses for off shore drilling. We all know how unreliable the safety measures were in the recent Gulf Coast oil spill. The biotech corporations are every bit as powerful as the oil corporations. The U.S. <strong>government does not believe</strong> that there is enough of a difference between GM crops and crops found in nature to be of concern.</p>
<p>I’m sure you will find it interesting that currently <em>several</em> of the most powerful positions in our government are being held by previous Monsanto employees. This includes a previous V.P./attorney to Monsanto who is now our newly appointed U.S. Food Safety Czar. He also is the same person that originally approved GM crops when he was in charge of the FDA.</p>
<p><strong>The 3 greatest risks associated with GM foods are:</strong></p>
<p>1) Toxicity<br />
2) <strong>Allergens</strong><br />
3) Antibiotic resistance</p>
<p>All three of these risks are important. But for today, we are going to focus on “allergens”.</p>
<p>No one would argue that food related allergies have been <em>rising</em> at epidemic proportions over the last ten to fifteen years. An allergic reaction to a specific type of food is the bodies overreaction to a protein that the immune system reads as foreign and dangerous. Isn’t it interesting that the huge rise in allergy related illnesses started happening at the same time these foods were introduced?</p>
<p>Does it not make sense that when you are injecting DNA (protein) from one species to another that a person could suddenly develop an allergic reaction from the newly created bioengineered food? Could these newly created foods also be introducing a whole new set of allergens? Could these new proteins create an allergic reaction because our bodies don’t recognize them and identify them as foreign? It makes all the sense in the world to me.</p>
<p>If you have a food related allergy, how do you know which foods are safe and which foods could have hidden ingredients that could be dangerous to your health?</p>
<p>The answer is simple…you don’t.</p>
<p>According to the Center for Disease Control, it is estimated that <strong>2% of adults and 8% of children</strong> are now suffering with some type of food allergy. According to the Consumer’s Union, medical polls show that 25% of American’s report that they or members of their family suffer from some type of food allergy or sensitivity.</p>
<p>More and more scientists are becoming concerned that new proteins spliced into genetically engineered foods could be allergenic. Dr. Rebecca Goldburg with the public interest group Environmental Defense states, “since genetic engineers mix genes from a wide variety of species, people who are allergic to one type of food may find that they are allergic to many more.” Proteins are what cause allergic reactions. Most all gene transfers in crops result in some protein production. New proteins will be found in crops from sources like peanuts, dairy and shellfish as well as from plants of all kinds, bacteria and viruses. The potential of these crops to create an allergic reaction is unknown.</p>
<p><strong>If you want to avoid GMOs, eliminating these will greatly reduce your risk of exposure:</strong></p>
<p>*Soy *Cotton *Canola *Corn *Sugar Beets *Hawaiian Papaya *Zucchini *Yellow Squash</p>
<p><strong>Beware of other sources that are processed versions of these foods:</strong></p>
<p>*Oils from the above list of ingredients, soy protein, soy lecithin, cornstarch, corn syrup and high fructose corn syrup.</p>
<p>*Meat, eggs and dairy products from animals that have been fed GM feed. Most of the GM corn and soy grown is used for feed.</p>
<p>*Dairy products from cows injected with rbGH (a GM hormone)</p>
<p>*Food additives, enzymes, flavorings and processing agents, including the sweetener aspartame and rennet used to make hard cheeses</p>
<p>*Honey and bee pollen that may have GM sources of pollen.</p>
<p><strong>USDA Certified Organic does not guarantee GMO free:</strong></p>
<p>When the certified organic laws were written, the standards included that they would be free of GMOs. Back then this was not a big issue because GM crops were just starting to be planted. Due to poor practices of ensuring seeds be kept separate, cross pollination and lack of government testing, today Certified Organic no longer is a guarantee that the products are GMO free.</p>
<p><strong>Summation:</strong></p>
<p>All of my research over the last several years and going through the Non-GMO Verifying process has only created more of a <em>desire</em> inside of me to ensure that we have access to natural and organic foods free of GMOs. <strong>“We the people” have become the unsuspecting lab rats for the biotech companies and our government allows it. </strong>These corporations are masters at spinning their greedy motives into statements of “humanitarianisms” such as “we want to feed the world.” Yes, I am sure that they do want to feed the world. If they are successful in doing so, this would mean that our food supply (seeds) would all be <em>owned</em> by these biotech corporations. If you’ve seen the movie <strong>Food, Inc.</strong> you know how ruthless these corporations have acted in the past towards small independent farmers that are already seriously struggling to survive.</p>
<p>We realized from the beginning that taking a public stand against GMOs could lead to retaliation from various government agencies closely tied to these biotech companies. We announced our Non-GMO “Verified” status on Tues. October 4th, 2010 and on Tues. October 11th, 2010 we had a visit from the USDA to do an inspection for the FDA. The FDA had not visited our facility in over three years.</p>
<p>Is this just a coincidence?</p>
<p>Perhaps it is just a coincidence or perhaps the FDA is sending us a message that they are watching us. What harm could possibly come from us avoiding GMOs in our products? If twenty years down the road GMOs are tested and proven safe what harm have we caused by not allowing them in our products? Absolutely none! But what if twenty years down the road GMOs are tested and proven to create a whole host of health issues? What the outcome will be if that happens is that we have helped to secure sources of ingredients that will be safe and in their original state. If 80% of products on grocery store shelves contain GMOs and they are proven harmful down the road, we are in a lot of trouble.</p>
<p>We know that <strong>approximately 80% of our customers</strong> have at least one type and many have multiple allergies to foods. We take this <em>very seriously</em> and this is the #1 reason that we believe that labeling is an absolute necessity to ensure the health and well being of everyone. We believe it is <strong>no longer possible</strong> for manufacturers to make a non-gmo statement with total certainty <em>unless</em> there is a 3rd party “verifying” that claim.</p>
<p>The Non-GMO Project’s Product Verification Program (PVP) systematically provides for the evaluation of products, ingredients and manufacturing facilities to determine compliance with the Non-GMO Project standard. As North America’s only independent, third party verification program based on transparent, consensus-based standards, products that have been assessed through the PVP and found compliant are the best choice for consumers wishing to avoid GMOs.</p>
<p>When you see the Non-GMO Project “Verified” seal on packages, you should feel confident that they are in fact meeting the <span style="text-decoration: underline;">highest standards</span> in the country to avoid GMOs. We could not be more proud to be part of this organization. We’ve always said, <strong>we do what’s right, even if it isn’t easy</strong>. Taking a stand and saying no to GMOs is not easy…but we most certainly believe that it is RIGHT!</p>

<p>Over the past year, through our facebook page, blog, and in e-mails, we have been heavily promoting the Non-GMO Project.</p>
<p>The Non-GMO Project is a non-profit organization that independently verifies manufacturers products, through traceability and testing to ensure that the products they produce are GMO-Free. The organization is committed to practical solutions offering north America’s first consensus based standard, 3rd party product verification program, and uniform seal for products made following best practices of GMO avoidance.</p>
<p>Today it is estimated that over 80% of processed foods on grocery store shelves contain GMO’s.</p>

<p>Never in a million years when I purchased Berlin Natural Bakery, would I ever have believed the amount of work that it takes to produce something as simple as a great loaf of bread.  After all, I considered myself to be a great baker&#8230;how hard could this possibly be?</p>
<p>There are moments in each of our lives that we look back and realize that one decision completely changed the entire course of our lives.  Purchasing Berlin Natural Bakery changed absolutely everything about mine.  Had I known going in to this what I was truly signing up for, I might not have done it.  Actually, I&#8217;m quite sure I wouldn&#8217;t have.  However, today I feel so fulfilled and incredibly honored to be part of helping to <strong>raise the standards of our food supply</strong>.  This is not an easy task for many reasons.  However, our rewards are in knowing that what we do truly improves the quality of people&#8217;s lives.</p>
<p>The <strong>production standards that we have put into place</strong> are based upon several decades of research and experience.  We do not change our products to meet the standards of the latest trends or fads.  We stay true to the mission.  What is that mission?  It&#8217;s very simple&#8230;to produce spelt products that you can trust.  Products that are made with ingredients that you can pronounce and easily recognize, that are NOT genetically engineered and that taste great.  Sounds easy?  Check out the steps we go through to make your loaf of bread.</p>
<p>1)  Contracts are negotiated with small independent farmers throughout Germany.</p>
<p>2)  Soil preparation and crop rotation standards are set, farmers are well trained and their farms are inspected.</p>
<p>3)  Genuine German certified spelt seed is planted.</p>
<p>4)  Farm equipment is cleaned and inspected to ensure no cross contamination:  seeder, combine and trucks.</p>
<p>5)  Routine farm inspections are done to ensure no chemicals are being used and that the quality standards of the spelt grain are being met.</p>
<p>6)  Genuine German Spelt is harvested and tested to ensure that it is &#8220;chemical free&#8221;.</p>
<p>7)  Genuine German spelt grain is stored in its tight outer hull, in a separate stand alone facility that has never been used to store other grains.  This facility is cooled and air blown&#8230;ensuring the grain does not become susceptible to mold or pests.</p>
<p>8)  The spelt is de-hulled upon demand of shipment.  Equipment used in de-hulling is only used for Genuine German Spelt.</p>
<p>9)  The grain is packaged and shipped in a sanitized and inspected container.</p>
<p><strong>Dr. Franck</strong> and his staff oversee the entire process of our Genuine German Spelt grain&#8230;from certified seed production &#8230;till it reaches our doors.  Their standards are so high, they can literally trace a bag of grain to the field or the lot in which it was grown.</p>
<p><span style="text-decoration: underline;"><strong>Then it&#8217;s our turn:</strong></span></p>
<p>1)  The spelt grain arrives at Berlin Natural Bakery&#8230;an ALL spelt bakery.  It is stored in coolers until milled.</p>
<p>2)  We stone grind the grain daily on site at the bakery.</p>
<p>3)  The flour we stone grind today&#8230;is used to produce the products we bake tomorrow.  Our flour is not stored for months, which ensures no rancidity or susceptibility to pests.</p>
<p>4)  Our stone grinding method allows us to preserve the whole grain.  We lose less than 1% during our milling process.</p>
<p>5)  We bake only small batch breads.  We do not over work the dough, add dough conditioners, gluten or preservatives.  This can only be achieved by baking small batches.  We have highly skilled bakers that oversee the entire baking process to ensure consistency and quality of every product.</p>
<p>6)  Our products are double bagged for freshness.</p>
<p>7)  Baked and shipped fresh daily.</p>
<p>8)  Our bakery holds the highest Kosher Certification &#8220;Orthodox Union&#8221;.  Soon to be Non-GMO Project approved.</p>
<p>Isn&#8217;t it amazing what all we go through to produce a loaf of bread?  Fortunately we didn&#8217;t have to meet these standards overnight.   Many of them have been established and implemented over the years due to our never ending need to know the truth and to do what is right&#8230;regardless if it&#8217;s what is easy.</p>
<p>Many of you may not even care about these standards and fortunately for you&#8230;you don&#8217;t have to.  <strong>You can count on us to continue to do our best to ensure you receive our best</strong>.</p>
