The Nicole Feel-Good Journey!
Hello everyone! This is a message from Nicole and while essentially all emails, blogs, social media posts come from me - few come from my personal life so I felt compelled to share a bit of my recent journey! Welcome to the crazy! ;)
Unlike many of you, I don’t consume Berlin Natural Bakery Spelt bread/baked goods because of an allergy or an illness. Obviously part of the reason I eat it is because I have access to it - big thanks to my Mom! But more recently, as I have gotten a little older, I have grown to appreciate it for its simplicity of ingredients and also, how I feel after I consume it!
I have been on my own health journey the last few years and I have recently started lifting weights 5 days a week. I don’t do it to “lose weight” although that is a bit of a plus but my main drive is to get strong, feel vital and go to war WITH my body as opposed to against it.
As a part of this journey, I have given myself permission to eat anything I want, within reason, that I can moderate. There are no “good” or “bad” foods but there are “optimal” or “feel good” foods and let me tell you, Berlin Natural Bakery Spelt bread is on the top of the list!
I have been eating foods for muscle recovery and Spelt bread has been a major part of that. Sometimes, it’s avocado toast, sometimes it’s just toast with butter and sometimes it’s peanut butter and jelly sandwiches. It really doesn’t matter to me what it is as long as it’s made with our Spelt bread.
I have studied and learned about Spelt for many years now but during this journey, the true benefits of having Spelt in my food repertoire has truly come alive for me. So let’s talk about it!
Compared to modern wheat, Spelt has more protein, fat and dietary fiber all of which can not only aid in muscle recovery but can possibly help improve cholesterol levels, reduce blood pressure, aid in digestion, help with weight management and even reduce your risk for diabetes! (1.)
Additionally, Spelt is believed to aid in circulation, building strong bones and boosting the immune system! (2.) All huge advantages when you are being active and really pushing your body.
Aside from the science, I can truly say that I personally feel good when I am regularly consuming good-for-me carbs like Spelt and I am betting there are quite a few people who happen to agree!
I enjoy every variety of sliced bread that we bake but I know that when it comes to muscle recovery and fueling her workouts, my Mom is a huge fan of the Sprouted Sourdough.
Even if you aren't currently in a season of working out - there is no denying the feel-good affects of Spelt!

Spelt is a winner and at the top of my list.
Whether it is the bread, rolls, pizza crust or flour for baking it is delicious, easy to digest and is nutritious.

In response to Denise’s question about low FODMAP foods: I have followed the low FODMAPS diet for about 6 years and I love the Farmhouse White Sourdough Spelt Bread! It works well for me. I also use the white spelt flour for baking and the white spelt pasta. I eat 1 or 2 pieces of bread daily and use the other mentioned products in moderation. I am so thankful to have found Berlin Natural Bakery!

I just bought your bread I didn’t use it yet . I am so happy to find it but I have a question so do you make your bread out of sourdough starter or regular yeast because this is what I am looking for my diet I can’t have white bread! Thanks

I do feel good eating the sprouted spelt bread. I can have it every day. Your bread is the only bread I eat at home. I may occasionally have something else when visiting or going out to eat. Thank you Nicole and everyone at Berlin Bakery.

Spelt is a winner and at the top of my list.
