As an athlete with Juvenile Diabetes, I have always struggled to balance the conflicting physical demands of fueling for training and competition, with maintaining good glucose control. One requires lots of food and the other requires restriction. When I discovered your sprouted breads at Arbor Farms here in Ann Arbor, MI, I immediately gave them a try. Wow, are they ever perfect for me! The sprouted spelt, biblical, sourdough, rye, and burger buns are may favorites. Finally I can replace what I burn up each day without spiking my glucose levels and feeling exhausted and sick. Your research is spot on. The ancient grains are what we're meant to eat, and using the sprouted grains keeps the release of glucose steady. I wish you could know what a relief it is to maintain good control and what a pleasure it is to be able to enjoy a couple of burgers or just a simple slice of toast with no worry or guilt! I've shared your products with many other friends with Type 1 Diabetes. We now all enjoy them at our get-togethers, including a delicious pudding made from your raisin bread! I discovered I was wheat gluten intolerant when I was a freshman in college. After struggling to find a product I could eat without not wanting to throw it back up because it tasted so horrible, I found Berlin Natural Bakery's spelt bread at a Whole Foods store in Dallas. As I'm A and my husband and son are O, spelt bread seemed like the best choice. However, it was really difficult to get and when we did find some, well, it simply didn't taste right... And then we found BNB! We love the sour dough and the raisin varieties and the burger and hot dog buns are very tasty. The bonus is that the breads are natural and processed minimally, with no additives, chemicals or preservatives; a must for us as that is the diet and life style we follow. Our ultimate favorite are the biblical sprouted bread sticks. Nothing goes better with thick homemade veggie soup than breadsticks fresh out the oven, especially this time of the year when the temps are dropping. I heard about your products from an alternative medicine nurse who recommended that I try your spelt breads and avoid wheat breads. It's been 14 years... I still buy and enjoy only Berlin Bakery's Spelt bread. I avoid wheat, corn and potatoes - which ALL of the other "gluten free/wheat free" breads contain. Dear Berlin Bakery, About 15 years ago, my husband and I were vacationing in “upstate” New York. He has an allergy to wheat therefore I was looking for a wheat-free bread for him. We happened to be near the town of Woodstock and I was shopping in a local store where I came across your (Berlin Bakery’s) spelt bread. When my husband ate the sandwiches I had made, he was delighted. He loved your bread. He said that the taste, texture, and characteristics of this spelt bread was the closest thing to “regular loaf” bread that he had eaten. We saved the wrapper from that bread and when we returned home we searched our local health good stores for your (Berlin Bakery’s) products to no avail. One store, “Health Heaven,” where we usually shop, we asked the manager for your bread. After we showed the wrapper to him he said he would try to get the bread for us. He contacted your company and got the spelt bread for us. Also, he has been happy to obtain this product because its one of his best sellers. When I went to the bread freezer in the health food store, there must have been over twenty frozen loaves to choose from. I was tired of not finding the whole grain rye sourdough bread that I liked among the usual bread trays. I started looking among the frozen loaves when I spied the Whole Grain Sprouted Spelt bread. It was a bit pricey, but I selected it anyway. This was my second experience with a sprouted grain bread. My first experience years ago with a sprouted grain bread did not go well. I was pleased to find that the Spelt loaf had a light texture and a light nutty taste. When I made toast, I needed to turn down the toaster control so as not to burn the bread. I had thought that my kids could never experience bread again. 3 years ago we had our two sons (who were 5 and 2 at the time) tested for food allergies. The results came back 25 and 17 things long. On their combined lists were wheat, soy, rye, barley, yeast, milk, eggs and handful of other very common foods. Needless to say, when we got home from the Dr. office, I had no food in the house that I could even serve them. Since then, we have gotten very creative with our meals. Lettuce leaves for buns on hamburgers, corn tortilla shells for pizza "crust". All kinds of things to try and replace something there is no substitute for. A nice, crusty, doughy, perfect slice of bread. The boys and I had reserved ourselves to never having another real piece of bread again. No sandwiches for school lunch, no toast with breakfast....no iconic childhood peanut butter and jelly sandwich. I have searched for three long years before stumbling across your delicious bread! There it was. Spelt Sourdough Bread and we could eat it. I swear to you, light shown down in the store on me and I heard angels singing! But the real test, would it taste good. The boys and I got home and I could barely get it thawed before they could get it to their mouth....Giggling in delight, they cheered, exclaiming, "It's REAL BREAD! And it's GOOD!" I am wheat intolerant. Also rice, rye, buckwheat and oat. Gluten-free products are not an option. I am a southern German immigrant and bread is the ruler of our food chain. Your spelt (white) is undeniably a miracle because it's easily digested with no harmful affects. It toasts great and has a good shelf life. It freezes well. My family all love it. I found it first in a little local grocery (Fiesta) in Sebastopol, a local town. No one carries a white spelt that isn't doughy, dense or mixed w/seed or other grains. It works great for Protein Vegetable diets as a treat because of it's low carb, low calorie count and simplicity of ingredients. Can't thank you enough and I am sorry you are hard to find. Dear Berlin Bakery, I have been buying your breads since I discovered them 3 years ago in Whole Foods Market here in Redwood City, CA. My whole family loves them and since we are very health conscious we were extremely pleased with the quality of bread you make. The breads are soft and light and most of all very tasty. We stay away from wheat and really like what you’ve done with the spelt. I buy the white, brown & raisin breads. I have a daughter who will be 4 in a few weeks. We are both August babies making us Leo’s. For some reason we have been wheat intolerant for a while and it was suggested we eat Spelt which we really enjoy, but there is not so many companies that make a quality spelt that is light like yours. In July of 2009 I was diagnosed with breast cancer. My diet had to change and although I was already eating the Berlin Bakery bread, now it was a matter of life or death. I just want to say how grateful I am for your company for making such a wonderful product that myself and my whole can enjoy and do. I am healing solely holistically and my tumor has decreased in size by almost 1⁄2 now. I am getting well and will be here for a lot longer. I struggle with digestion issues and recently switched to a low FODMAP diet. I can't eat traditional gluten containing breads without horrible consequences. Last week while grocery shopping, and keeping in mind I wanted to eat healthy foods and natural foods, I found and purchased two loaves of Berlin Natural breads, one being the sour dough spelt bread and the other the sprouted grain bread. In 1996 my son was diagnosed with a life-threatening allergy to all nuts and sesame seeds. Needless to say it was quite a shock to a family who had never been exposed to such an allergy. As time passed, it appeared all products started incorporating nuts into their ingredient lists. As I set out to find bread products not incorporating or manufacturing with nuts/sesame seeds, I found Berlin Natural Bakery products in Whole Foods. I purchased a loaf and came home and called immediately to verify the fact that nuts/sesame seeds were not ingredients or ever used on the production line. We now exclusively purchase your breads for our home and are thrilled that they are not only healthy but safe as well. Sean is now a sophomore in college in Washington, DC. Dear Berlin Bakery Friends, You asked: "do you love our products and have a story to share??' YES INDEED. A few years ago I moved from California to East Tennessee, Johnson City to be exact. In CA I had a number of wonderful health food stores in the area where I lived that helped me find products that I could eat and were free of dairy and wheat. When I arrived in Johnson City, I learned of 2 local health food stores, one of which was named the Health Barn and is very close to my condo. The people at the Health Barn listened to my tale of woe and have been wonderful in introducing me to many of the products that they carry. The bread they told me about was from your company. They asked me if I had tried any spelt products, explaining that it was not wheat but was an early relative of wheat and totally different than the wheat of today. I carefully tried your spelt varieties and love them. My two favorites are Sourdough and Righteous Raisin. The Sourdough is firm and is wonderful for sandwiches and even works for an occasional hamburger. The Righteous Raisin is THE BEST!! Since I do not eat any wheat, I do not ever eat doughnuts, or breakfast rolls, or cookies or cakes, or??? Righteous Raisin is my TREAT!! I probably have 20 or more ways that I can prepare it to be the basis for curbing a sweet tooth craving. I LOVE IT!! SO, THANK YOU FOR MAKING QUALITY BREADS THAT HAVE INTEGRITY. I love your spelt bread and have been eating it since approximately 1993. It was given to me as a gift during a multi-million dollar contract negotiation. A team and I were involved in a 6 week contract negotiation in Ohio. After a few weeks, a highly-reserved gentleman from the opposing team noticed that I was passing on the “regular” luncheon foods and asked if I was allergic to wheat. He seemed pleased to learn that I was because apparently his wife was also, which I believe was much more uncommon in the early ’90s than it is today. The next day he brought me a loaf of your spelt bread to try as a gift. I loved it! For the rest of the negotiations, I was appreciative to be able to make sandwiches like everyone else and he was much more cordial. In the end, my team, my corporation and I celebrated a tremendous victory. Not being able to find a distributor in Los Angeles at that time, I had your spelt bread shipped to me by the case. When I moved in 1995 to attend graduate school in Washington, DC, I was pleased to find it in local “health food” stores. Currently, I buy a loaf of your sprouted spelt bread almost every week and, when I can find it, I treat myself to your raisin bread. Over the years I’ve served your bread to friends, unbeknownst to them that it did not contain wheat, and they’ve enjoyed it too. It is a wonderful alternative from the other brands of wheat-free breads, which tend to be heavy, dense and lacking in flavor. Quite the contrary, your bread is light and full of flavor. I found out about Berlin Bakery very recently! I was diagnosed with type-2 diabetes in November of 2009. I began to look for foods that I could eat without having to increase my diabetes medicines. All breads and pastas were off limits at that point, especially processed white breads! One evening about 4 months ago, I had some friends over for dinner. We were making pizza toasats in the oven, and they brought Berlin Bakery Sourdough Spelt for theirs. (Their family eats whole and organically due to health needs in the family) I was curious about the bread, and tried it. To my surprise, my sugar levels were minimally effected. Since that evening, I have tried other products including the noodles, pastas and cookies. It is a pleasure to once again be able to use my panini press or to make my favorite pasta dish, knowing that the spelt products are better for my health and also help me to better manage my diabetes.
