That has been a tenet that we have lived by for several decades now. We practice this every single day and it can be seen in every single loaf of bread that we bake.
Our production standards and practices are based off of decades of research and experience. We do our best to stay up to date on current trends and fads but we do not bend to them. We stay true to our mission which has always been to create quality, heirloom Spelt baked goods that you can trust. Made with easily recognizable ingredients that you can pronounce and out of this world flavor – our Spelt products are like none other.
It sounds easy on paper but follow along to see all the steps we go through to make your daily bread!
Our process starts in Canada.

Contracts are negotiated with small, independent farmers throughout Canada.

Soil preparation and crop rotation standards are set and farmers are thoroughly trained and their farms are inspected.
- Genuine certified USDA Organic Spelt seed is planted. This Spelt grain is an Heirloom variety that is actively protected.

Farm equipment (such as seeder, combine and trucks) is cleaned and inspected to ensure there is no cross contamination between crops.

Routine farm inspections are done to ensure no chemical pesticides or herbicides are being used and that the quality standards set by our world renowned grain grower are being met.

Organic Spelt crop is harvested and tested to ensure it is free of chemical pesticides and herbicides.

Organic Spelt grain is stored with its tight outer hull still intact. It is stored in a separate, stand alone facility that has never been used to store other grains. This facility is cooled and air blown, ensuring the grain does not become susceptible to mold or pests.

The Organic Spelt is then de-hulled upon demand of shipment. .
- The grain is packaged and shipped in a sanitized and inspected container from Canada to our facility in Ohio!

The USDA Organic Spelt grain arrives at Berlin Natural Bakery in Berlin, Ohio and it is stored in coolers until it is milled.

We stone grind the grain on site, daily.

The flour we stone grind today is used to make the products we bake tomorrow. Our flour is not stored for months on end which ensures no rancidity or compromise by unwanted pests!

Our stone grinding method allows us to preserve the whole grain. We lose less than ½ of 1% in the milling process.

We only bake in small batches. By baking in small batches we don’t have to use dough conditioners, gluten or preservatives! Our highly skilled baking team oversees the entire baking process to ensure consistency and quality of every product we make.

Once baked and cooled, our products are double bagged for freshness. These bags protect it from the freezer environment – we use no preservatives so many of our retailers and customers freeze our products until they are ready to be consumed.

Our products are baked and shipped fresh daily.

Our bakery holds the highest Kosher Certification – Orthodox Union.
- Our breads were the first in the United Stated to be Non GMO Project Verified!
Even as I write this out, I find it incredible what all we go through to simply produce a loaf of bread. Thankfully, these standards and processes weren’t developed overnight. Most all of them were developed over the years during our never ending pursuit to know the truth and to do what’s right whether it is easy or not.
Many of you may not really even care about these standards and fortunately for you – you don’t have to! You can count on us to continue to give only our very best.
