Fudge-y & Rich White Spelt Brownies
Ok, so these bad boys were made on an evening when all I really wanted was for my house to smell good for the company that was on the way. My house always smells good (I'm not an animal!!) but I was looking to set a mood of domesticity especially since I was expecting a group of women!
I'm not kidding when I tell you that these brownies were the best I have ever tasted - and I've tasted many brownies in my lifetime! The coarse Sea Salt makes all the difference if you're like me and a fanatic for a good salty-sweet combo!
Here's what to do:
Ingredients:
1 Stick Salted Butter
6 oz. Bittersweet Chocolate
3/4 Cup Granulated Sugar
3 Large Eggs
3/4 Cup Packed Light-Brown Sugar
1/2 tsp Coarse Sea Salt
1/4 Cup Unsweetened Cocoa Powder
3/4 Cup Unbleached White Spelt Flour
Directions:
- Preheat oven to 350 degrees
- Line an 8 inch baking pan with parchment letting it overhang a little on two sides and then butter parchment or spray with cooking spray.
- Put butter and bittersweet chocolate in a fairly large, heat proof bowl set over a pan of simmering water. (I used two similarly sized sauce pans, one on top of the other - pictured below).
- Melt and stir until smooth.
- Remove from heat and whisk in sugars.
- Whisk in eggs one at a time until combined.
- Whisk in Cocoa and salt, then fold in flour until combined.
Pour batter into your lined pan and bake until a toothpick inserted in the middle comes out with moist crumbs - was about 35 minutes for me.
Let cool completely in the pan, preferably sitting on a wire rack away from heat.
Lift out parchment with using the overhanging parchment.
Cut into 16 squares (or however many you want!)
Then take a minutes to prepare yourself for some gooey, chocolate-y deliciousness!

Have you made this with the whole grain spelt? If you did, what would you do to keep texture and taste the same? I know King Arthur website recommends letting brownies made with whole grain to sit overnight to settle and soften? Thanks so much! Looks delicious!
