Homemade White Spelt Buttermilk Biscuits
Oh happy day! I got my Mom's buttermilk biscuit recipe to share with all of you!
So first, you have to understand that my mom LOVES to cook/bake for her family and friends. It's definitely her love language and let me tell you, we are forever grateful that we get to be the recipients of that love (and food)!
Now, when someone comes to visit her or my birthday rolls around or the Holidays are approaching - we always look forward to that beautiful question from my Mom: What would you like me to make special for you?
I share this because her sausage gravy and biscuits are definitely high up on that request list! I honestly do not think I have the words to accurately describe just how fabulous my Mom's biscuits are. Looks like you'll just have to try your hand at them and experience it for yourself!
Ingredients:
2 cups Unbleached White Spelt Flour
1/4 tsp Baking Soda
1 tbsp Baking Powder
1 tsp Salt
6 tbsp Unsalted Butter, cold
1 cup Buttermilk
Directions:
Preheat over to 450 degrees
Combine dry ingredients (flour, soda, power & salt)
Cut butter into flour mixture
Add Buttermilk (do not overwork)
Put mixture on floured cutting board
Gently Pat it down, do not roll
Cut dough into individ. biscuits
Place in baking pan close together so they will rise high and stay moist
Bake in over for 10 - 12 minutes

I only have Berlin bakery stone ground whole grain spelt flour on hand. What changes, if any, do I make to White spelt buttermilk biscuit recipe? Thanks

These tasted to me like pancakes, not that that’s a bad thing, but I think a little sweetener would be nice in the mix. Also the dough was super sticky. Not sure why. I got about 8 medium sized biscuits out of this and they stuck to my non-stick pan. I think a bit of parchment or some other non-stick addition would be helpful. The texture was really nice so I might try these again at some point.
