Cinnamon Spelt Coffee Cake
This recipe creates a buttery, moist and cinnamon-ly sweet coffee cake. Just so you are prepared - creating the topping can be a little labor intensive because that butter will fight you every step of the way. Don't give up! I promise, it is worth it!
Ingredients:
1 ½ cups Unbleached White Spelt Flour
½ cup of Light Brown Sugar
½ cup of Milk
¼ cup of soft Butter
2 Eggs
1 Tbsp Cinnamon
1 tsp Baking Powder
Topping:
½ cup Unbleached White Spelt Flour
6 Tbsp soft Butter
½ cup of light Brown Sugar
1 Tbsp Cinnamon
Directions:
Preheat oven to 350 degrees.
Topping: Using a small fork, fold ingredients until the dry ingredients are blended with the butter to form a lumpy streusel-type substance.
Main Cake: Mix butter and sugar together. Add eggs and mix until smooth. Add the remaining ingredients and continue mixing.
Spread the mixture into an 8×8 inch, VERY well-greased baking dish. Before placing it in the oven add the crumble topping evenly on the top of the cake mixture.
Bake for 30 - 35 minutes. Top should be golden brown. Let sit before before slicing.
